Research Interests

Chemical contaminants (toxic compounds formed during processing, toxic compounds naturally present in plant and animal products, environmental contaminants, migration of chemical substances present in food packaging, and mycotoxins). Food additives. Residues of pesticides and veterinary drugs used in the primary production of plant and animal foods. Food adulteration. Development and validation of analytical methods for the determination of toxic substances in food. Human exposure assessment, through intake estimation studies and identification of biological markers. Health risk assessment and development of mitigation strategies along the food chain; aimed at consumer safety.
